El chile ancho seco, es de color café rojizo, mide en promedio 12 cm de largo y 7 cm en su parte más ancha. Tiene forma triangular y su piel es de textura rugosa y brillante. Los mejores son flexibles al tacto y nunca tiesos. Al remojarse adquieren un color rojo ladrillo, por ello es el encargado de colorear la gran mayoría de los guisos rojos. Es tal vez el chile más utilizado en formas diferentes. Fresco es el chile poblano. No se debe confundir el chile ancho con el chile mulato, que es más oscuro y grande. Para distinguirlos se deben abrir y mirar a contraluz: el ancho se ve color rojo y el mulato color café. Distinguirlos es muy importante, porque si se utiliza un chile por otro el resultado del sabor del guiso no será el esperado, ya que estos chiles en apariencia son muy similares, pero su color y sabor son totalmente distintos. Del chile ancho existen algunas variedades regionales, como la llamada chile chino, en San Luis Potosí y en las Huastecas. Con el chile ancho se hacen todo tipo de moles, adobos, diferentes clases de salsas picantes y chiles rellenos, además de colorear caldos y sopas.
