El arroz integral es cualquier tipo de arroz, solo conserva la cáscara o el salvado. Aunque tienen las mismas calorías que el arroz blanco, tienen más vitaminas y minerales y fibra. Es por tanto te sacía más al comer y tiene un índice glucémico menor.
¿Cómo cocinar el arroz integral?
No existe una receta mágica o universal para cocer el arroz integral al punto
No intentes dejarlo como el arroz blanco: El arroz integral es especial, no tiene el mismo comportamiento que el blanco al cocerse, ni la misma textura, es un poco más duro, por la cáscara o el salvado.
No lo laves ni lo remojes, sólo tuéstalo un poco: Se supone que vas a hacer un arroz integral porque es más sano ¿no? Entonces, ¿por qué quieres lavarlo o remojarlo? ¿Para retirar parte de sus propiedades? No tiene sentido.
PREPARACIÓN PARA 4 PERSONAS:
- Coloca una olla pequeña a fuego medio. Añade 2 cucharadas aceite de oliva y 300g arroz integral. Tuesta los granos durante 2 minutos.
- Añade 1.5lt de agua y sal al gusto. Sube a fuego vivo y mueve un par de veces.
- Cuando comience a hervir baja la intensidad del fuego, debe hervir lento. En este momento cuenta el tiempo. Cuese entre 20 a 45 minutos, dependiendo la textura que quieras, vigila que no se quede sin agua.
- Si necesitas, escurre el agua que sobra
